Nutritional benefits

Wild garlic is a fantastic spring seasonal ingredient that offers a milder flavour to our more common regular garlic, but is also another fabulous source of multiple nutritional benefits.

  • Some of the benefits of wild garlic include:
  • Supporting our heart health through its anti-hypertensive properties and as a source of calcium
  • Its antioxidant properties – Vitamins A and C can help reduce the risk of cancer
  • Vitamin A is also essential for eye health, especially our night vision
  • Vitamin C supports our immune system and fights infections
  • Calcium supports our bone and muscle health
  • Copper also supports our bones and our skin health

Storage and Saving

Hey pesto!

Make a pesto which lasts for two weeks. Pick up to half a carrier bag of leaves to make plenty of pesto. Swap your usual basil for wild garlic and blitz with oil, pine nuts and sea salt. You can add in the traditional parmesan, or for a vegan version add a tablespoon of nutritional yeast. Store in the fridge for two weeks in an airtight jar with a small drizzle of oil on the top to seal in the colour and flavour.

Butter wouldn’t melt!

Make wild garlic butter: Blitz up your wild garlic, soften some butter using a wooden spoon and then mix – if using unsalted butter, you may want to add a little sea salt to make the flavour pop. Once mixed in, form patties, or make butter sausages, wrap each one in baking paper and freeze – can be used straight from the freezer to add onto new potatoes, or a tray of roasted veggies, add to mash, use to make garlic bread, or use to make your cauliflower cheese – yum!
